Day 1

Truffles and mushrooms: precious gift from the Apennines

First day dedicated to the search for the precious gastronomic secrets of the forest of the Apennines, like the delicious and precious IGP porcini mushrooms of Borgotaro, the many edible "epigei" (common) mushrooms or the precious and rare truffles.

Along marked and protected paths and environments, immersed in centuries-old woods, with GAE guide of the Emilia-Romagna Region, expert in mycological and gastronomic, authorized to harvest mushrooms and truffles, with research dog. Snack in the woods, when weather conditions allow it. At the end of the journey, a precious little edible gift to help us remember the pleasure of the experience.

All in public and private woods, private reserves with exclusive collection, in the municipalities of Borgotaro, Albareto, Pontremoli, Tornolo, Bardi, Varsi, Salsomaggiore, Fornovo, Terenzo, Bore, Pellegrino, according to growth (truffles and mushrooms are subject to spontaneous growth and harvest periods, depending on the species)

Duration: 4 hours (morning or afternoon)

Difficulty: low (minimum of altitude difference, marked paths, in maintained woods)

Cloths: sportswear, legs and arms protected, sport shoes

Suitable also for children, the dog is used to children presence

Day 2

Parmigiano-Reggiano and Parma city

Guided visit of a diary that produce Parmigiano-Reggiano cheese with final tasting. 

This is a truly unique experience that allows you to see the creation of the most famous cheese in the world, Parmigiano Reggiano.

It starts in the morning quite early because the cheese is produced only once a day and only in the morning. Starting from the freshly milked milk poured into the polished copper boilers you will see the transformation that leads to the typical shape that we know well.

The visit allows you to follow all the steps that after the "birth" provide rest, salting and finally the aging in large and very high salt where Parmigiano Reggiano continues its transformation.

The morning then continues with the discovery of the historic center of Parma always accompanied by your authorized guide.

Parma is the small city you don’t expect, full of surprises and curiosities.

Our tour starts from the heart of the city: Piazza Garibaldi, crossed by the Via Emilia and surrounded by palaces of different styles and ages.

The walk continues through the streets of the center to Piazza Duomo, where you will admire two true masterpieces of the Middle Ages of Parma: the magnificent Cathedral and the antelamic Baptistery.

It takes just a few steps to take a leap in time and get to the sixteenth century, when the Farnese built the Palazzo della Pilotta, a gigantic service palace that now houses museums and cultural institutions of great importance for Parma.

Our tour ends in front of the Teatro Regio, because the music here is still in the soul of the people, and because the building was commissioned by Maria Luigia, Duchess loved by Parmesans.

In front of the Teatro Regio stands the sinuous architecture of the Church of the Steccata, fabulous city temple that houses the remains of many of the Dukes of Parma and was frescoed by talented local painters, the most famous of which, Parmigianino, left here his last masterpiece

At the end of the visit there will be a typical Parmesan "going-away" lunch.
